No-Bake Easy Energy Bites

I'm in that ravenous stage of breastfeeding.
I eat huge helpings and chug water and still need snacks all the time.
Luckily, I found an awesome recipe for energy bites in a compilation from an old singles' ward so I adapted it a bit to make it better for breastfeeding, and I've been so happy with the result.

This recipe made 84 Tablespoon-sized energy bites
...with enough for snacking on it while I made them...

Also, measurements are approximated because I could only find my 1/3c scoop (thanks, toddler) so don't sweat it if you're going to try it.

3 cups Oats
1/3-1/2 c Ground Flax Seed
1/3 c Chia
1/2-1c Shredded Coconut
1/2-1c Semi-sweet Chocolate Chips
1 16oz jar Peanut Butter*
1 1/2 c of honey and coconut oil**

First, mix all the dry ingredients (I did this easily in my Bosch). Then add the peanut butter and mix it well.
Add the honey and coconut oil very last and mix until it all looks even.

Using a Tablespoon measuring spoon, scoop onto a cookie sheet covered with parchment paper.
Make sure each scoop is packed tightly enough that it all sticks together.
Refrigerate for at least an hour until each bite is firm and dry.
Then you can store it in a Tupperware or Ziplock bag in the fridge and snack on a couple whenever you need it!

I have loved having these on hand and eat several throughout the day.
I'm no nutritionist, but I tell myself they're healthy (right? haha. the only sweetness comes from the honey and chocolate chips),
and I'd much rather have my family snacking on these instead of cookies and fruitsnacks...
The best part is, my family thought it was cookie dough at first! That's how yummy these are!
And they're perfect for satisfying my post-dinner sweet-tooth instead of breaking out the ice cream.

Another great thing about this recipe is how easy it is to change it up.
You can easily substitute dried fruit for the chocolate chips and any type of nut butter for the peanut butter.

I can't wait to make these again!



*or any nut butter. I used crunchy, natural peanut butter.
** I did about 1/3c honey and 1+c coconut oil, but do whatever ratio you want.
